Anna Krpec's Walachian Sauerkraut Soup (Valašská Kyselica)


2 quarts water
2 quarts sauerkraut
4 medium potatoes, peeled and diced
1/2 tsp. caraway seeds
1/2 pound Czech sausage, diced
1/2 cup onion, diced
1 bay leaf
6 whole allspice berries
2 beef boullion cubes
1 teaspoon marjoram
1 teaspoon chopped parsley
1 tablespoon minced garlic
1 cup milk
1/2 cup half–and–half
salt and pepper to taste

  1. Put water and sauerkraut in large soup pot and cook for 30 minutes.
  2. Sauté sausage and onion until onion is soft. Add potatoes to sauerkraut. Add sausage and onion, bay leaf and allspice. Add more water if necessary to cover all.
  3. Cook for 45 min. Add remaining ingredients and simmer for 30 min. longer.
  4. Milk and half–and–half can be adjusted to taste.

Serves 8.
