10 lbs. Pork
1 lb pork liver
1 pkg. pig ears
2 lbs rice
2 cups barley
Cook pork, liver and ears in salt water. Grind all meats into bowl then season with salt, pepper and garlic to taste.
Cook barley and rice separately. Mix meat with rice and barley and check seasonings. Stuff meat into casings and place in boiling salt water for 5 - 10 minutes, or wrap into 1-pound packages to freeze. Hot option: add jalapeno pepper to taste.
We usually bake ours in the oven before serving. Drizzle with syrup if desired.
